Pav Bhaji

Ingredients

Cauliflower-1 cup

Capsicum-1/2 cup

Tomato-2 nos

Potato-1 big

Carrot-1 big

Onion-1 medium

Ginger-Garlic paste-1 tsp

Green chilli-1 no

Chilli powder-1 tsp

Turmeric powder-1/4 tsp

Pav Bhaji Masala-1 tbsp

Coriander leaves-a few

Lime juice-1/2 of one lime

Butter-1 dollop

Toasted pav buns in butter-4 nos

Oil

Water

Salt

Method

Pressure cook all the vegetables(potato,carrot and cauliflower) and smash it.Reserve the stock.

Heat oil in a pan and saute onion and green chilli until soft.Add Ginger-Garlic paste and saute for sometime.Add capsicum and saute for sometime.Add tomatoes,red chilli powder,turmeric and pav bhaji masala and salt and cook until its soft and done.

Add the mashed vegetables and mix well.Add the vegetable stock and cook for a few minutes in sim flame.When the bhaji thickens check for salt and switch off the flame.Add a dollop of butter and lime juice and mix well.Garnish with coriander leaves.

Serve with butter toasted pav buns,onion wedges and lime.
